Cut, peel and dice apples, add them into the water as you cut them to keep from browning. In a large saucepot, add apples, sugar, pectin, cinnamon, ginger and the juice of a lemon. Bring to a boil while stirring consistency. Let boil for 30 minutes. Using an immersion blender or food processor, blend the jam until smooth. (Be careful if using an immersion blender, as the jam will be hot.) Over low heat, simmer for 20 more minutes once its been blended. Once cooked, divide into 6 bowls to color. Using food coloring gel, color the apple jams red, orange, yellow, green, blue and purple. Let come to room temperature before covering and putting in the fridge to cool. Cover and put into the fridge to cool and set. Once the jam is set and cooled, apply jam in order of color to a piece of japanese milk bread. The first things we need for zap apple jam are, of course, apples! We’re using granny smith and honeycrisp. Peel and core the apples, and chop them up into small pieces. Fill a large bowl with about 4 cups of water and a pinch of salt. Let the salt dissolve before adding the apples. The salt will prevent them from turning brown. In a large saucepot, add the apples, sugar, pectin, cinnamon, ginger, lemon juice, and pectin. Bring the mixture to a boil while stirring consistently. Allow the jam to boil for 30 minutes, then use a hand blender, blend the apple chunks until smooth. Reduce to low heat, and allow the jam to simmer for an additional 20 minutes. For the rainbow element, we added the jam to 6 little bowls and then colored each of them with a little bit of gel food coloring on a toothpick, and then a good stir to blend in the color. you will need all of the colors of the rainbow for maximum my little pony authenticity: orange, yellow, purple, green, blue and red--this is not rainbow order, we’ll get to that when the jam meets the bread. Now that we have all our colors ready, let’s put them all together on the bread. We wanted to showcase the vivid colors, so we didn’t toast our bread. You’ll just have to imagine a golden brown toast with creamy butter and there you have it--freshly made, delicious zap apple jam in all its rainbow glory.
